Honestly expected to really like this addition to my field cooking kit. But, alas, it was a bit of a let down.
I am a Japanese food chef and prefer the santoku design for my go to kitchen utility. It does have the thin blade geometry, the small cutouts so that veggies don't stick, and the roughly sheepsfoot shape, but it lacks sufficient knuckle clearance to do a good rocking cut or even a proper draw or pull cut, even in index or pinch grip.
More seriously though (perhaps it was a factory defect on this knife alone) but there is a noticeable interruption in the blade curvature (radius) and this odd dedect even extends into the secondary bevel. In other words, the sharp, polished, curved edge of the blade suddenly gets flatter about 2 cm from the tip then resumes the previous curvature. The edge bevel at that 2 cm point goes from about 1mm to about 0.5mm at that point. It was as if somebody made a mistake while sharpening it and over grinded at that point.
I would say that the customer service, communications, and shipping were good. It took about 2 weeks from Finland to neighboring Norway.
I cannot recommend this Ontario knife if you are a serious cook. But I think the company is fair and reliable. Kiitos.
